Chocolate cake: flourless, delicious and easy

This chocolate cake is rich and moist even though it doesn’t contain flour. Delicious, soft, it is made with eggs and chocolate, nothing else. No sugar, butter, oil: just two ingredients.

But this is for the base. Once baked, then, she will be covered in a delicious ganache that will make her irresistible. Try it, just one bite will be enough to fall madly in love with this extraordinary and incredibly easy dessert.

If you want to decorate it in an artistic way, you can make a kind of chocolate bar by simply covering the filling with cellophane and drawing horizontal and vertical lines, it will be even more inviting.

But now let’s get to the point and tie up our apron! It begins!

Flourless chocolate cake: ingredients and preparation

For this recipe, get:

  • for the base:
    • 4 eggs
    • 200 g of milk chocolate
  • for coverage:
    • 1 yolk
    • 100 g of dark chocolate
    • 25 g of sugar
    • 185 g whipping cream

Cocoa powder (unsweetened)

Preheat the oven to 160°.

Butter a 16cm square cake pan.

Break the eggs by separating the yolks and whites.

Boil a saucepan with water, break up the milk chocolate and melt it in a bain-marie (or in the microwave). Let it cool, then add the reds. Whip the whites until stiff and add them to the yolks and chocolate mixture, mixing delicately with a spatula. Do it several times so as not to compromise its softness.

Transfer the dough into the mold and bake for 30 minutes.

Remove from the oven and leave to cool completely before turning out of the mould, then remove the edges to give the cake greater precision and place it in a slightly smaller, square cake tin.

Put the egg yolk, sugar and cream in a saucepan. Put on the fire over low heat and mix with a hand whisk to melt the grains, then turn off the gas and add the bitter chocolate, melt it by stirring carefully, use this ganache to decorate the surface of your cake. Let solidify completely and sprinkle with bitter cocoa. Store your dessert in the refrigerator until it’s time to enjoy it.
