Chickpea and spinach meatballs, a healthy and tasty second course with only 50 calories!

Preparing a tasty, healthy and vegetarian second course isn’t as difficult as it might seem, because the recipe for chickpea and spinach meatballs fully satisfies these three requirements. Furthermore, it is also a good solution to recover leftover spinach (boiled or cooked in a pan).

Among other things, it is a very simple dish to prepare, not to mention that it will delight the palate of adults and children alike, because vegetables and legumes are not only good for you, because if joined together they have a harmony that makes them absolutely tasty and above all amazing!

The recipe for chickpea and spinach meatballs, a nutritious and light second course

Ingredients

  • 1 red onion
  • 400 g of spinach
  • 400 g of already boiled chickpeas
  • a drizzle of olive oil
  • 80 g of breadcrumbs
  • Parsley to taste
  • Curry to taste (optional)
  • Salt and Pepper To Taste

Preparation

  1. First, if you don’t have them ready, you have to take the spinach and put it to boil in a pot of properly salted water.
  2. Once ready, drain them and to make them lose all the excess water, squeeze them well , then take a bowl and put them in it together with the chopped onion, parsley and chickpeas, then blend everything using an immersion mixer .
  3. Then add both the curry and the salt and pepper (obviously the quantity depends on your personal tastes), then start mixing until you get a mixture of fairly generous dimensions with a homogeneous consistency, after which start shaping your meatballs.
  4. Finally, when you have finished this operation, roll them in the breadcrumbs and then place them on a non-stick baking sheet, then season them with a drizzle of olive oil and cook them (to obtain a crunchy result on the outside and soft on the inside) for about 15-16 minutes in the oven at a temperature of 190°C . Serve and enjoy them when they are still hot.
