Ingredients

Preparation

  1. Cut the beets into cubes and collect them in a tall glass.
  2. Add the soy milk and salt and blend until smooth.
  3. Pour in the sunflower seed oil slowly, continuing to blend at low speed.
  4. When the mayonnaise has reached the desired consistency, add the lemon juice and blend for another minute.
  5. Transfer the mayonnaise into a jar and store it in the refrigerator until ready to serve.

Advice

  • For a thicker mayonnaise, increase the amount of beets or use an oil with a higher smoke point.
  • If you want to get a tastier mayonnaise, add a spoonful of mustard or a pinch of black pepper.
  • Beetroot mayonnaise will keep in the fridge for 3-4 days.

Variants

  • For a creamier mayonnaise, you can replace the soy milk with vegetable cream.
  • For a spicier mayonnaise, add chopped red chili pepper.
  • For a more aromatic mayonnaise, add a spoonful of chopped chives.
