Is there anything better than yoghurt, orange and meringue cake to satisfy your sweet tooth? The answer is no, since you are faced with an exceptional recipe. Indeed, this is not the classic yogurt cake because its filling gives it an extra touch.

Surely, it will drive everyone crazy and not even a crumb will be left over, so much so that one slice leads to another and being able to stop requires a certain amount of self-control. Bringing it to the table as a dessert means leaving guests speechless, because most likely no one has yet had the good fortune to taste something tastier and more inviting.

But the good news doesn’t end there! Because, if you are thinking about the problems you might have with your diet, you can rest assured, as long as you don’t overdo it, nothing prevents you from enjoying a small portion. Furthermore, the procedure does not give particular headaches, guaranteeing anyone a perfect result.

The recipe for the yogurt, orange and meringue cake: very tasty!

Ingredients

  • 280 g of flour
  • 70 g of melted butter
  • 50 g of sour cream
  • 20 g of stevia sweetener (or alternatively 40 g of normal sugar)
  • 8 g of vanilla sugar
  • 2 yolks
  • 1 teaspoon baking powder
  • 1 pinch of salt

What is needed for the filling

  • 40 g of butter
  • 30 g of stevia sweetener (or 60 g of regular sugar)
  • 4 oranges peeled and diced

What you need for the meringue

  • 500 ml in yogurt
  • 50 gr of stevia sweetener (or 100 gr of normal sugar)
  • 25 gr of corn starch
  • 2 album

Preparation

How to make the dough

  1. To start, break the yolks into a bowl, add the pinch of salt, the vanilla sugar and the stevia sweetener (or sugar), then beat with a hand whisk.
  2. Once you have obtained a smooth and creamy mixture, add the melted butter and the sour cream, then start stirring again.
  3. Now mix the flour together with the yeast, sift it and incorporate it into the mixture, mix quickly with the manual whisk and knead with your hands until you obtain a soft and homogeneous shortcrust pastry .
  4. Once this is done, roll out the pastry into a 24 cm round mold with a hinge lined with special paper, raise the edges, prick it with the prongs of a fork and bake (very hot oven) for 10 minutes at a temperature of 180°C .

How to make the stuffing

  1. Put the butter in a non-stick pan, let it melt, add the stevia sweetener (or sugar) and mix to melt it properly.
  2. Add the peeled and diced oranges, mix and cook for 8-10 minutes .

How to make meringue

  1. Pour the yoghurt and cornstarch into a bowl, then mix with a hand whisk to obtain a smooth mixture.
  2. Separately, whip the egg whites with an electric whisk, as soon as they begin to become frothy , add the sweetener stevia (or sugar) a little at a time, then work until stiff.
  3. Incorporate the egg whites into the yoghurt and, in order not to disassemble them, mix delicately with the hand whisk starting from the bottom up.

How to assemble the cake

  1. Once this is done, place the oranges on the base of the cake, cover them with the yogurt meringue and level them properly with the spatula.
  2. Finally put it to cook in a preheated oven for 60 minutes at a temperature of 180°C , at the end let it cool down, remove the cake from the mold and serve.
