It is a simple and delicious recipe to make chicken strips with vegetables. You can adapt the ingredients and spices according to your preferences.

Ingredients:

For the chicken strips:

500 g chicken breasts, cut into strips
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon cumin
Salt and pepper to taste

For the vegetables:

1 Red bell pepper, cut into strips
Green bell pepper, cut into strips
1 onion, cut into strips
2 carrots, cut into thin strips or grated
1 zucchini, cut into strips (optional)
1 cup broccoli, cut into small florets

For the sauce:

3 tablespoons soy sauce
2 tablespoons honey
2 tablespoon rice vinegar
1 teaspoon grated fresh ginger
1 tablespoon cornstarch dissolved in 2 tablespoons water

Preparation:

In a bowl, mix the chicken strips with the garlic, paprika, cumin, salt and pepper. Make sure the chicken is well coated with the spices.

Heat a large skillet or wok over medium-high heat. Add the olive oil and cook the chicken strips until golden and cooked through. Remove the chicken from the pan and set aside.

In the same pan, add more oil if necessary and sauté all the vegetables until tender but still crisp.

While the vegetables are cooking, mix all the sauce ingredients in a bowl.

When the vegetables are done, add the chicken strips back to the pan and pour the sauce over the mixture. Stir well so that everything is covered with the sauce and cook for a few minutes until the sauce thickens.

Serve the chicken strips with vegetables over cooked rice or noodles, and garnish with scallions or fresh cilantro if desired.
