This is perhaps the most unexpected recipe ever: delicious and light baked pasta pies that will delight you and your little ones.

Fun, colorful, these muffins are a real delicacy. Serve them as a holiday appetizer, as a finger food aperitif, as a main dish: they are nutritious, but light.

A pleasure for the eyes and for the palate.

They are prepared in a quarter of an hour, cooked in half an hour and with our doses you will fill a 12-portion cup. Each provides just 120 calories.

And the good news doesn’t end there. This dish lends itself to being counted among the fridge emptiers par excellence, because if you have leftover pasta from the day before, you can recycle it to prepare these delicacies!

Baked pasta pies: ingredients and preparation

For this recipe, get:

  • about 150 g of pennette (or pasta of your choice)
  • 4 eggs
  • 150ml of milk
  • 100 g of grated Parmesan
  • 300 g of diced tomatoes
  • 2 minced garlic cloves
  • 1 chopped onion
  • enough of chopped fresh basil
  • just enough pepper
  • just enough salt

Cook the pasta in plenty of salted water as usual. Meanwhile, preheat the oven to 200° and grease the muffin pan. Keep them handy, just long enough to prepare everything and you can bake.

Meanwhile, cut the tomatoes into cubes and place them in a bowl. Finely slice the onion, mince the garlic and mince the basil, then add them to the bowl and mix well to flavor the sauce.

Drain the pasta, divide it in half to reduce it in size and transfer it to a bowl, stir in the seasoned tomatoes and mix to uniform.

On the side, break the eggs into a bowl, add the milk, season with salt and pepper and emulsify well with the prongs of a fork.

Now with a spoon, fill the cups with the tomato flavored pasta and pour the milk and egg mixture. Sprinkle with grated cheese and bake for 15/20 minutes. Take them out of the oven when they are golden on the surface. Serve them still hot and steaming, they are a marvel.
