The recipe for cold apricot sweets, so creamy that they melt in your mouth!

Ingredients

  • 1 kg of apricots
  • 400ml of milk
  • 100 g of stevia sweetener (or alternatively 200 g of normal sugar)
  • 8 g of vanilla sugar
  • 6 tablespoons of corn starch
  • 1 tablespoon of flour
  • 450ml of water
  • Just enough coconut flour for garnish

Preparation

  1. To start, peel the apricots, remove the stone, cut them in half, place them in a small bowl and beat them with an immersion blender to obtain a puree.
  2. Now pour the mixture into a saucepan, add the water, mix with a spatula, add 50 g of stevia sweetener (or 100 g of sugar) and 4 tablespoons of cornstarch, then mix .
  3. Now pour the milk into another saucepan, add 50 g of stevia sweetener (or 100 g sugar), the vanilla sugar, 2 tablespoons of corn starch and the flour and stir with a whisk .
  4. Once this is done, bring the two pots to the heat and, taking care to mix from time to time, let the two compounds thicken .
  5. Rinse 5 tall glass glasses with a drop of water, transfer ½ ladle of apricot puree, ½ of milk and continue until all the ingredients are used up.
  6. Finally cover with transparent film, place in the refrigerator for 2 hours , at the end cut the sweets from the glasses, roll them in the coconut flour, cut them into 3 parts and serve them.
