No yeast, oil and eggs! Diet wraps in 5 minutes, just flour and yoghurt

Typical dish of the Romagna tradition, piadine are the ideal base for composing delicious main courses but also sweet or savory snacks. Stuffed with Nutella they can become a fantastic breakfast or mid-day snack while enriched with rocket, stracchino and mortadella they can be a mid-afternoon treat or, why not, a light and quick alternative dinner. 

Children also love them because they can have fun assembling and stuffing them as they please. To prepare them very soft at home you just need a few ingredients and a few work steps. Let’s find out together what they are and how to make them with this recipe for wraps with flour and Greek yogurt.

Very soft piadine, only yogurt and flour and they will be the best

Ingredients

  • 330 g of type 1 flour
  • 250 g of plain Greek yogurt
  • A pinch of salt
  • A pinch of baking soda

How to prepare very soft piadinas

  • First, take a container and pour in the flour and a level spoonful of baking soda as well as a pinch of salt, then mix well with a fork to mix the three dry ingredients.
  • Gradually add the Greek yoghurt and work everything to mix the ingredients.
  • When the dough has reached a certain consistency, transfer it onto a suitably floured work surface and knead it until you obtain a compact, homogeneous and elastic dough.
  • The base for preparing the wraps is ready! Let it rest covered with a tea towel for about an hour and a half at room temperature.
  • After the rest time, take the dough back and shape it into a loaf.
  • Then divide the loaf into portions of about 80 g each.
  • With the help of a rolling pin, roll out each portion making discs a few millimeters thick.
  • Thoroughly heat a lightly greased non-stick pan with a drizzle of oil and then, when it is hot, place the first disc.
  • Cover the pot with a lid and keep the flame medium / low . After a few moments, turn the piadina to continue cooking on the other side.
  • Place the lid back on and you will see that it will start to inflate like a balloon: at this point remove the lid and continue cooking, turning it several times until it is ready;
  • Proceed by cooking all the portions and then serving, filling as desired.
