Courgette flan: with only 2 courgettes, eggs and cheese. Only 130 calories!

All you need is 2 grated courgettes, cheese and eggs for this delicious flan! A golden crust, a soft and enveloping consistency, a delicate but full flavour, make this dish a small home-made masterpiece. Seeing it like this, inviting and tasty, your little ones will let themselves be convinced to taste it and, to your utmost satisfaction, they will ask for an encore, despite their proverbial aversion. And if you too give in to the temptation to savor two dishes, do not fear repercussions on your silhouette, because it is dietary! Only 130 calories per serving for full health. In fact, you will offer your family a dish complete with all the nutritional properties necessary for a balanced meal: proteins, dairy products, mineral salts, carbohydrates.

Very easy to make, this recipe will “steal” just a quarter of an hour of your time. It cooks in about an hour and disappears in an instant! What are you waiting for then? Get to work, let’s get started!

Delicious zucchini flan: ingredients and preparation

For this recipe, get:

  • 3 tablespoons of flour
  • 200 gr of light scamorza-type cheese
  • 2 large courgettes
  • 3 eggs
  • 2 tablespoons light mayonnaise or yogurt sauce
  • 1 coarsely chopped onion
  • 1 teaspoon baking powder
  • a drizzle of olive oil
  • chopped dill to taste
  • black pepper to taste
  • salt to taste

With these doses you will get 8 portions.

Wash the courgettes, dry them well and peel them. Then grate them into julienne strips and place them in a fine-mesh strainer. Place it on a bowl, add the salt, distribute it well and let it rest for about ten minutes.

In the meantime, preheat the oven to 180°, just long enough to prepare your flan and it will reach temperature. Grease a rectangular baking dish with a drizzle of oil, cover the bottom and edges with a thin layer.

Peel the onion and slice it not too finely. Chop the dill with a crescent. Cut the scamorza, or any other type of soft cheese, into cubes. Sift the flour into a bowl. Keep everything close at hand.

Squeeze the courgettes with clean hands to free them completely from the liquid, then put them in a bowl. Add the eggs, onion, yoghurt sauce or mayonnaise, dill and pepper.

Mix all the ingredients in order to obtain a very uniform mixture; to do this, simply use a wooden spoon. At this point, add the diced cheese, distribute it evenly and finally add the flour and mix again. Now all you have to do is transfer everything into the mold and bake for an hour.
