The dream of each of us, when we return in the evening, is a cheap and fantastic dinner, quick and simple, perhaps even dietary. The solution, then, is this recipe: 3 potatoes and 3 eggs are enough to prepare a single dish, complete with vitamins, mineral salts, starches and proteins, but very light. Only 220 calories per serving and with these doses you will get 4 servings.

Everyone, young and old, will like it for its round and stringy, well blended, full flavor that melts on the palate and gives great satisfaction.

Just a quarter of an hour to prepare it, 10 minutes to let the sliced ​​potatoes rest, a quick cooking of just 17/19 minutes and in less than three quarters of an hour you’ll have a small home-made masterpiece on the table.

Potato omelette for a fantastic dinner: ingredients and preparation

For this recipe, get:

  • 3 eggs
  • 3 potatoes
  • 100 gr of cheese cut into cubes (such as Galbanino light)
  • a drizzle of olive oil
  • ¼ teaspoon salt
  • ½ teaspoon paprika (optional)
  • just enough pepper

First, focus on the potatoes. Peel them and cut them into julienne strips, then arrange them in a bowl, submerge them with running water and let them rest for about ten minutes, so that they lose their starch. Meanwhile, in a clean bowl, break the eggs, add the salt and pepper, then work them with the prongs of a fork. Cut the cheese into cubes and keep it handy.

Drain the potatoes with a fine-mesh strainer, then transfer them to another container and add the eggs. Mix well, add paprika if desired. Stir again to distribute the seasoning and spice.

At this point you just have to grease a non-stick pan and put it on the stove with a cheerful flame. Pour half of the mixture into the bottom and put the lid on. Cook for 3 minutes.

Remove the lid and distribute the cheese, then cover with the remaining mixture and cook over low heat for another 6 minutes. Turn the omelette and cook for about ten minutes with the lid on.

Plate up your delicious dinner and cut it into slices, then enjoy!
