Zucchini crepes are an unexpected recipe! They are milk omelettes that contain julienne grated vegetables inside, delicious, delicious and with a stringy cheese filling.

Perfect for a light and dietary dinner, they provide only 180 calories each; and they are also ideal as a snack for a snack that does not impact on the figure, but injects new energy to end the day. Furthermore, nothing prevents those who love a savory breakfast from taking advantage of it for a complete and nutritious meal.

Even the little ones of the house will appreciate your dish, even though they are not always well disposed towards vegetables, because cooked like this they are irresistible.

Zucchini crepes: ingredients and preparation

For this recipe, get:

  • 500 g of courgettes
  • 250 g of flour
  • 300ml of milk
  • 2 eggs
  • 150 g of cheese
  • 1 grated onion
  • Just enough dill
  • Just enough of olive oil
  • Just enough pepper
  • Just enough salt

With these doses you will prepare 8 crepes.

Grate the courgettes into a bowl, you have to cut them into julienne strips. On the market you can find them ready in an envelope, but we advise you to use the freshest, whole and possibly organic ones to guarantee you a truly healthy and genuine product.

Break the eggs into another bowl, then beat them with a hand whisk or fork. Pour them over the vegetables and mix. Peel the onion, slice it finely, add it to the mixture just made. Add salt and pepper, then add the milk and flour and mix with the spatula. When the dough is well distributed. Brush a non-stick pan with a drizzle of oil.

With a ladle, take a knob of the mixture, distribute it on the bottom so as to create a perfect disc and cook it for 5 minutes on both sides. Meanwhile, grate the cheese and flavor it with dill.

Sprinkle everything on your crepe and close it in half. Wait for it to melt and slide it onto a serving plate, continue in this way until all the ingredients are used up.
