Cabbage meatballs without eggs, also good for children. Only 40 calories!

If you are looking for a 100% vegetarian second course, which is also as tasty as it is fanciful, then the recipe for egg-free cabbage balls is exactly what you are looking for. In fact, it is a very simple but extremely good dish that everyone will like without distinction, especially children. Which as we all know most of the time refuse to eat vegetables. Which won’t happen with these meatballs anyway, they’ll gobble them up!

Furthermore, thanks to their lightness and ease of preparation (it will take you very little time) it is possible to propose them for lunch, or for dinner, not just once but as many times as you want.

The recipe for cabbage meatballs without eggs, a tasty and delicious second course

Ingredients

  • 750 g of cabbage
  • 300 g of potatoes
  • 50 g of breadcrumbs
  • 25 gr of corn starch
  • 5 g of salt
  • a drizzle of extra virgin olive oil
  • Just enough chopped fresh parsley
  • Just enough pepper

Preparation

  1. To start, clean your cabbage, then remove the central stem ( which is particularly hard ) and the outer leaves, then wash it properly.
  2. Done, peel the potatoes and cut them into logs, then transfer them together with the cabbage into a pot of boiling water and cook them.
  3. As soon as the vegetables are ready, drain them, wait for them to cool down and then using a fork, mash them, obtaining a mixture with a homogeneous consistency.
  4. Now add the cornstarch, breadcrumbs, parsley, salt and pepper to your “puree”, then mix everything together so that the ingredients blend well with each other.
  5. At this point you can start making your meatballs, so after rolling them up, crush them lightly with your hands.
  6. Now line a baking sheet with baking paper, place the meatballs on it and give them a nice brush with extra virgin olive oil.
  7. Finally put them to cook in a preheated oven at a temperature of 220°C for 25 minutes.
  8. Once ready, take them out of the oven, then wait for them to cool down before bringing them to the table, because this way you will certainly taste them better.
