The mandarin cake must absolutely be tried, because it is a real unmissable gem that you will fall in love with at the very first bite. In fact, this dessert makes these fruits decidedly tastier as the dough enhances their citrus flavor, giving you a fluffy and soft dessert.
In this way you can have a breakfast, or a snack, that will go far beyond your expectations. Everyone will be thrilled, because no one has ever tasted a more delicious and good tangerine cake than this one.

Then, preparing it is absolutely not complicated, just 10 minutes is enough and the steps are easily followed, as it is sufficient to put the ingredients in a bowl and mix them well with electric whisks.

And what about its lightness? This cake is no problem for those on a diet, allowing anyone to taste at least a slice!

Ingredients

  • 150 gr of flour + 1 tbsp
  • 4 tangerines
  • 70ml of oil
  • 50ml of water
  • 35 g of stevia sweetener + 1 tablespoon (or alternatively 70 g of normal sugar)
  • 2 eggs
  • juice of 1 mandarin
  • 1 sachet of baking powder
  • 1 sachet of vanilla
  • 1 knob of butter for the pan
  • 1 pinch of salt
  • ½ grated orange zest

Preparation

  1. To start, peel the tangerines, cut them in half, place them upside down in a buttered rectangular ceramic dish and sprinkle them with 1 tablespoon of flour and 1 tablespoon of stevia sweetener (or 2 tablespoons of sugar) and set aside.
  2. Now break the eggs into a bowl, add the tangerine juice and a pinch of salt and whisk with electric whisks.
  3. Once you have obtained a frothy mixture, add 35 g of stevia sweetener (or 70 g of sugar), the grated orange peel and the oil and mix with an electric mixer.
  4. Now insert the water, flour, baking powder and vanilla, then resume working with the electric whisk to obtain a smooth and homogeneous consistency .
  5. Once this is done, pour the mixture over the tangerines, taking care to cover them completely, then level with a spatula.
  6. Finally put it to cook in a preheated oven for 25 minutes at a temperature of 195°C , at the end sprinkle your cake with icing sugar.
