Ingredients

  • 2 eggplants
  • 150 ml of tomato sauce
  • 100 g of flour
  • 100 g of breadcrumbs
  • 100 g of cooked ham cut into pieces
  • 100 g of Galbanino light cut into strips
  • 20 g of grated Parmesan
  • 2 eggs
  • a drizzle of olive oil
  • Just enough basil
  • Just enough pepper
  • Just enough salt

Preparation

  1. First, trim the aubergines, cut them (lengthways) into half-centimeter thick slices , place them on a cutting board, salt them on both sides and set them aside for a moment.
  2. Now pour the tomato sauce into a small bowl, flavor it with salt, basil, pepper, a drizzle of oil and mix with a spoon.
  3. Now dab the aubergines with sheets of absorbent paper, stuff one with the cooked ham cut into pieces, a little tomato sauce and Galbanino, then cover with another slice of aubergine (go ahead until you finish the ingredients).
  4. Once this is done, dip the aubergines in the flour, in the beaten egg with salt and pepper and in the breadcrumbs, then place them in a dripping pan lined with special paper.
  5. Finally put it to cook in a preheated oven for 30 minutes at a temperature of 200°C , at the end bring it to the table.
