  • 6 tablespoons white vinegar
  • 200 grams of grated mozzarella
  • 100 grams of butter
  • 1/2 teaspoon salt

Procedure

  1. Let’s start by heating the 2 liters of milk in a pot until it reaches a lukewarm temperature, making sure not to allow it to boil.
  2. Add the 6 tablespoons of white vinegar to the milk and mix evenly. You will notice how the rennet begins to form, separating from the whey.
  3. Cook the mixture for 5-7 minutes, stirring occasionally, until the whey (that yellowish liquid) has completely separated from the curd.
  4. Place the rennet in a strainer to drain the whey and allow the cheese to acquire its characteristic shape.
  5. Meanwhile, grate the mozzarella, which will add a special nuance to your creation.
  6. In a frying pan, melt the butter and add the drained rennet. Mix well.
  7. Add the salt and the grated mozzarella, continuing to mix until you obtain a homogeneous and creamy paste.
  8. Transfer the preparation to a plastic bottle, previously washed and dried, compacting it properly. Keep it in the refrigerator overnight so that it acquires the perfect texture.
