However, today I will present you a unique and delicious variant: Pumpkin Pesto. Pumpkin brings a distinctive flavor, lying somewhere between carrot, chestnut and sweet potato, creating an intriguing blend of flavors. This pesto is versatile and can accompany a variety of dishes, from pasta to fish or simply spread on toast.

Ingredients to prepare pumpkin pesto:

  • 250 grams of pumpkin
  • 3 garlic cloves
  • Olive oil
  • 60 grams of walnuts
  • 60 ml olive oil (divided)
  • 50 grams of grated parmesan cheese

Procedure:

  1. Preheat the oven to 200 degrees Celsius.
  2. Place the 250 grams of pumpkin on a plate and add a small splash of olive oil and the 3 cloves of garlic.
  3. Bake for about 30 minutes until the squash is tender.
  4. Remove the skin from the pumpkin and cut it into pieces.
  5. In a frying pan, lightly roast the 60 grams of walnuts for a few minutes until golden brown.
  6. In a blender, add the roasted pumpkin, roasted garlic cloves, roasted walnuts, 60 ml of olive oil and 50 grams of grated Parmesan cheese.
  7. Blend until you obtain a smooth puree. You can pause the blender to fold the edges towards the center to ensure a smooth mixture.
  8. If you want a more fluid consistency, add 60 ml of olive oil again. Adjust according to your preference.
  9. This pumpkin pesto is delicious with pasta, rice, fish or spread on toast.
  10. Keep in mind that there are numerous variants of pesto in Italy, and this version without bread, nuts or basil is equally delicious.
