Put cornstarch in the caramel, no baker wants you to know the recipe

Making good candy can be very satisfying and gives you a sense of accomplishment. In addition, homemade candy usually has a superior flavor and quality than store-bought candy.

Caramel is the base of many desserts such as custards, crème brûlée, soft caramels, caramel sauces, and more. With good caramel, you can create a variety of sweets and desserts.

Caramel’s deep, complex flavor, which combines sweet and slightly bitter notes, can enhance any dessert , adding an extra layer of flavor.

You can customize the caramel to your preferences, adjusting the amount of salt to make a salty caramel, or adding flavors like vanilla, rum, or spices.

Ingredients to prepare a good caramel

  • 1 cup of sugar (200 grams)
  • 1 cup of water
  • 20 grams of cornstarch (cornstarch)
  • 50 milliliters of water
  • 2 tbsp unsalted butter

Procedure

  1. We heat a frying pan over medium heat and add the sugar and mix well until we see that the sugar has completely melted.
  2. Then in a cup we add the cornstarch and water and dissolve well with the help of a spoon and set it aside.
  3. When the caramel is ready, we add a cup of water.
  4. We will see that the caramel begins to stick but let’s not worry because we continue mixing and the caramel will come off.
  5. Cover so the caramel melts faster while stirring occasionally to prevent sticking. In approximately 8 minutes it should be ready.
  6. Add the unsalted butter and mix well and add the dissolved cornstarch and stir constantly for 4 minutes over low heat.
  7. We already have our candy.

Additional Tips

  • Use a heavy-bottomed pan to prevent the sugar from burning and cook evenly.
  • Once the sugar has dissolved, avoid stirring it too much to prevent crystallization. If necessary, use a damp silicone spatula or gently shake the pan.
  • Store the candy in an airtight container to keep it fresh and prevent it from getting soggy.
  • Making caramel can be a challenge, but practice and patience will help you perfect the technique.
  • Hot candy can cause serious burns. Handle with care and keep children away while cooking.
