Delicious sauce to dress your meals: all my friends ask me for the recipe!
This sauce is perfect to season your meals and surprise your guests. The combination of eggplants, tomatoes and peppers creates a unique and delicious flavor.

Ingredients
- 4 eggplants
- 2.5 kg of tomato
- 4 red peppers
- 4 onions
- a handful of parsley
- Salt and pepper to taste
- Ground chili (optional)
Preparation
- Cut the eggplants into squares. Place them in a strainer and sprinkle salt over them to remove the bitterness. Let them rest for 30 minutes. Rinse the eggplants with cold water and dry them with a clean cloth.
- Wash the tomatoes and make a small cross at the base of each one. Place the tomatoes in boiling water for 1-2 minutes. Remove the tomatoes from the water and place them in a bowl of cold water. Peel the tomatoes, remove the seeds and cut them into squares.
- Wash and cut the red peppers into small squares, removing the seeds and white parts. Peel and cut the onions into small squares.
- In a large frying pan, heat some oil over medium heat. Add the onions and sauté until translucent. Add the peppers and cook for a few minutes until softened.
- Add the chopped tomatoes to the pan and simmer for 20-30 minutes, stirring occasionally. Add the eggplant and continue cooking for another 15-20 minutes, until all ingredients are cooked through and the sauce is thick. If you want a spicy touch, add ground chili to taste.
- Finely chop the parsley and add it to the sauce. Stir well and adjust the flavor with salt and pepper to taste.
- Let the sauce cool to room temperature and then refrigerate. This sauce is ideal to accompany pasta, meat, or as a dip for your appetizers.
Tips:
- Storage : You can store the sauce in airtight jars in the refrigerator for up to a week, or freeze it in portions for later use.
- Texture : If you prefer a smoother sauce, you can put it through a food processor before adding the parsley.
- Variations : Experiment by adding other herbs such as basil or thyme to give it a different touch.
