Malfouf Mehchi

Here is a wonderful recipe of stuffed cabbage or Malfouf mehchi, the recipe is well explained. Enjoy it hot or warm.

Ingredients
A glass of chopped onion. A glass of chopped parsley. A little dried mint.
A glass of diced tomatoes.
A glass and a half of round rice cheated 20 min in water.
1/2 glass of minced meat. A few cloves of garlic.
2 tablespoons of olive oil. A little salt, pepper, paprika and caraway. A tablespoon of concentrated tomato.
Preparation
Fry the onion and garlic in a little olive oil until brown,
Add the minced meat.
Let it brown for a few minutes.
Then, turn off the heat and add the rice, completely removed from the water.
Add the spices, the parsley, the diced tomatoes and the mint and mix it all together and leave it aside.
Cook the head of cabbage for a few minutes in boiling, salted water. Detach the leaves.
Take a cabbage leaf, remove the hard part in the middle. Put a tablespoon of stuffing along the edge.
Form a cigar, and tighten well so that it does not open during cooking. Take a pot, cover the bottom with the hard parts of the cabbage and the torn leaves.
Place the cigars in a circle, taking care to hold them tightly so that they don’t open up during cooking.
Sprinkle the resulting layers of cabbage with a little dried mint.
Take a large glass of hot water, add a little salt, olive oil and a tablespoon of concentrated tomato.
Pour it on the cigars, light the fire, when the liquid starts to boil, reduce the fire, cover the leaves with a plate so that the cigars keep their shape.
Check from time to time. If you see that everything is cooked and that there is still some liquid.
Remove the lid and plate and let cook until all the sauce has evaporated.
Serve hot or warm.
