Citrus Muffins

Citrus Muffins are a light and fragrant recipe, perfect for breakfast or brunch. They are made with fresh ingredients such as orange and lemon juice and zest, as well as flour, sugar and eggs. These moist and delicious muffins are a sweet treat to start the day.

Ingredients

  • 2 whole eggs
  • 100 g of flour
  • 100g potato starch
  • 125 grams of granulated sugar
  • 75g corn oil
  • 75 g of citrus juice (1/2 lemon, 2 mandarins, 1 orange)
  • 1/2 teaspoon baking powder
  • Grated citrus zest
  • Icing
  • 50 grams of powdered sugar
  • Three tablespoons of citrus juice

Preparation

  1. Beat the eggs and add the sugar. Then add the oil, citrus juice, yeast and zest. Finally add the flours and mix until a creamy mixture is obtained.
  2. Pour the mixture into molds and bake at 180 degrees for 20 minutes.
  3. Frosting: mix the sugar and mix the juice little by little.
  4. Brush frosting over muffins and serve.
