SWEET AND SOUR PORK RECIPE

Ingredients:
1/2 pound (0.2 kg) pork tenderloin, cut into bite-size pieces
1/2 green bell pepper, about 2 ounces (56 g) and cut into pieces
1/2 red bell pepper, about 2 ounces (56 g) and cut into pieces
2 stalks scallions, only the white part, cut into 2-inch length
1 piece fresh/canned pineapple ring, cut into small pieces
1 clove garlic, finely chopped
oil for frying
MARINADE:
1 tsp soy sauce
1/2 tsp cornstarch
1/2 tsp rice wine
FRYING BATTER:
2 ounces (56 g) all-purpose flour
1 ounce (30 g) cornstarch
1/2 tsp baking soda
1/2 Egg
1/2 c water
1 tsp cooking oil
1 pinch salt
SWEET AND SOUR SAUCE:
1 1/2 tbsp tomato ketchup
1 tsp plum sauce
1/8 tsp Chinese rice vinegar, transparent in colour
1/2 tsp Lea & Perrins Worcestershire Sauce
1 tsp oyster sauce
1 tsp cornstarch
1 tsp sugar
2 tbsp water
Directions:
Slice the pork tenderloins into small pieces.
In a mixing bowl, add all the ingredients for the marinade. Stir until well combined.
Add the pieces of pork into the bowl with the sauce. Allow them to marinate for about 20 minutes.
In another mixing bowl, add all the ingredients for the sweet and sour sauce. Stir until well blended.
In another mixing bowl, add all the dry ingredients. Whisk until well mixed.
Add water and eggs. Whisk until well mixed and thick.
Transfer the marinated pork into the bowl and toss until well coated.
Place a deep skillet on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the pork pieces and cook each side until they turn golden brown.
Remove from the skillet onto a clean plate lined with paper towels to drain any excess oil.
Place a wok on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the garlic and sauté until aromatic.
Add the bell peppers and pineapples. Sauté until translucent and fragrant.
Pour in the sweet and sour sauce. Stir until well combined thick.
Remove from the heat and garnish with scallions.
Serve over rice and enjoy!
