  • INGREDIENTS FOR THE RECIPE.
  • 4 pounds of beef, chamberete, neck, decimillo, chamorro.
  • 3 pounds of ribs
  • 8 guajillo chiles.
  • 6 pasilla chiles.
  • 1 head of garlic.
  • 1 whole onion.
  • 10 tomatoes.
  • 1/2 tablespoon of cumin.
  • 1 tablespoon of oregano.
  • 4 cloves.
  • 4 peppers.
  • 4 avocado or bay leaves.
  • 1/4 cup of white vinegar.
  • 1 beer.
  • 4 tablespoons of chicken broth.
  • Salt.
  • PREPARATION MODE.
  • Put the garlic, onion, pepper, vinegar, and cloves in the blender, grind everything and with this marinate the meat, we are going to leave it overnight one day before cooking it.
  • Boil the chiles without veins or seeds for about 5 minutes and leave them in that water for a while so they soften.
  • Preheat the oven to 400 f or 200 c.
  • Put them in the blender along with the tomatoes, oregano, broth, and beer, being careful when blending and start with low speed, because the gas from the beer would knock off the lid of the blender.
  • Put this entire mixture on the meat and on top of the avocado leaves.
  • Put the meat in the oven and cook it for 3 to 4 hours.
  • It has to be very well covered, so that the steam does not escape.
  • Be careful when removing it from the oven.
  • Serve it with onion.
