Ingredients
For the cake :
- 3 large eggs
- 1 tsp. of salt
- 12 tablespoons of sugar
- 12 tablespoons of sunflower oil

- Lemon zest
- Juice of 1/2 lemon
To moisten the cake :
- 100 ml of evaporated milk
- 150 ml of condensed milk
- 100 ml of milk cream
Coverage :
- 200 ml Milk cream
- 4 tablespoons of sugar
- 1 tablespoon cream cheese
- Cinnamon powder
Procedure
1. For the cake : Start by beating the eggs with the salt in a bowl. Add the tablespoons of sugar and continue mixing. Then, add the oil, milk, lemon zest and juice. Continue mixing until well integrated. Add the sifted flour and baking powder and mix until you obtain a homogeneous preparation. Pour the mixture into a previously buttered and floured mold. Place in a preheated oven at 180°C for 35-40 minutes. Once ready, let it cool.
2. How to moisten the sponge cake : In a pot, combine the evaporated milk, condensed milk and heavy cream. Heat the mixture for about 5 minutes over medium heat. With a fork, prick the entire surface of the cake. Then, place it in a bowl and cover it with the milk mixture. Cover with film and place in the refrigerator for about 30 minutes.
3. Coverage : In a bowl, begin to beat the cream with the sugar. When you notice that it is halfway done, add the cream cheese. Continue beating until firm. Once the cake is ready, cover it with this cream and sprinkle with cinnamon.
