Ingredients
- 4 pieces of veal osso buco
- Salt and pepper to taste
- Flour (amount needed to flour the meat)
- Oil (amount needed to brown)
- 2 medium onions or 1 large
- 2-3 carrots
- 3-4 cloves of garlic
- 3 sticks of celery
- 2 tomatoes
- 3 bay leaves
- Rosemary and parsley to taste
- Salt to taste
- Cumin to taste
- Pepper to taste
- 500 ml meat broth
- 300 ml red wine
- 100 ml milk cream
Preparation
- Tie the pieces of veal ossobuco with kitchen string or make some cuts in the membrane to prevent them from becoming deformed when cooking. Season with salt and pepper on both sides.
- Dredge the osso buco pieces in flour and shake off the excess.
- In a large skillet, heat a generous amount of oil over high heat. Brown the ossobuco pieces on both sides until they are well sealed. Remove them and reserve them.
- Meanwhile, cut the vegetables: onion, carrots, garlic and celery into large pieces.
- In the same oil where you browned the meat, sauté the vegetables for a few minutes.
- Add the bay leaves, salt, cumin and pepper. Cook for 5 minutes.
- Add the tomatoes cut into pieces and cook for a few more minutes.
- Dissolve a teaspoon of concentrated broth in half a liter of hot water and add it to the casserole along with the red wine.
- Let the mixture boil for 2 minutes.
- Place the osso buco pieces back in the pot and add the broth. Cover and cook over low heat for 1 and a half to 2 hours, until the meat is very tender.
- Remove the ossobuco pieces and set them aside. Filter the contents of the pot to obtain the cooking juice.
- Recover the carrots from the filtrate and add them to the juice. Add 100 ml of milk cream and cook for 3 more minutes.
- Serve the ossobuco accompanied by the delicious sauce and allow each guest to serve the amount of sauce they want.
