Ingredients

For the meat loaf:

  • 1 onion
  • 2-3 tablespoons of oil
  • 1 sweet red pepper
  • 125g cheddar cheese
  • 1 teaspoon meat seasoning
  • 1 kilo of minced meat
  • 3-4 cloves of garlic
  • Parsley or dill to taste
  • 4 tablespoons sour cream
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon smoked or regular paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon basil
  • 1 teaspoon dried onion
  • ½ teaspoon chili flakes
  • 2 eggs
  • 100-200 g breadcrumbs

For the sauce:

  • 150 ml barbecue sauce
  • 150 ml tomato sauce
  • 1-2 tablespoons Dijon mustard
  • Seasoning for meat, salt and black pepper to taste

Preparation

  1. Preheat the oven to 190°C (400°F).
  2. Finely chop the onion and sweet red pepper.
  3. In a frying pan, heat 2-3 tablespoons of oil and sauté the onion and red pepper until tender. Let it cool.
  4. Grate the cheddar cheese.
  5. In a large bowl, mix the ground beef with the minced garlic, parsley or dill, sour cream, salt, paprika, garlic powder, basil, dried onion, chili flakes and the eggs.
  6. Add the onion and pepper sauce, the grated cheese, the meat seasoning and the breadcrumbs. Mix well until you obtain a homogeneous mass.
  7. Place the meat mixture in a baking dish, shaping it into a loaf.
  8. Bake for 20-30 minutes.
  9. While the meatloaf is baking, prepare the sauce by mixing the barbecue sauce, ketchup, Dijon mustard, meat seasoning, salt and pepper.
  10. After the first 20-30 minutes of baking, remove the meatloaf from the oven and brush it generously with the prepared sauce.
  11. Put the meatloaf back in the oven and bake for 15 more minutes so that the sauce caramelizes and penetrates the meat.
  12. Remove from the oven, let it rest for a few minutes and serve.
