Fried Mojarras
Ingredients
24 cloves of garlic, cleaned
1 teaspoon of coarse salt
Salt and pepper
4 mojarras
Flour
To accompany
Corn tortillas
1/2 lettuce, chopped
2 tomatoes, sliced
1 red onion, cut into rings
1 avocado, cut into slices
Lemons, cut in half
2 cups of white/red rice
Preparation
- RINSE the mojarras, drain and make 4 diagonal incisions on each side of the fish so that the flavors of the mojo enter and marinate the meat.
- DRY the fish with a clean kitchen towel. Grind the garlic with coarse salt and pepper in a mortar or pestle; set aside.
- SEASON with salt and pepper; inside, outside and in the incisions. Spread the garlic mojo all over the fish, just as you seasoned it with salt and pepper.
- SPRINKLE lightly with flour on both sides.
- FRY the fish in plenty of hot oil for 7 to 10 minutes on each side. Remove excess oil.
- SERVE and accompany with rice and fresh salad
