Courgette tacos are a simple and delicious appetizer , a variant with vegetables of the classic Mexican tortilla to be folded and filled as desired. In our recipe we made this particular tortilla with grated zucchini and mixed with eggs, breadcrumbs, garlic and onion powder and grated cheese. You will then need to make mini omelettes from the dough, which will be cooked in the oven for about 20 minutes, before being filled with cream cheese and smoked salmon . A light and delicious dish ideal for dinner or a quick and delicious lunch. Obviously you can vary the filling as you like, using the ingredients you have in the fridge. How to prepare zucchini tortillas
Step 1
Grate the courgettes1Squeeze them with your hands to remove excess water.
Step 2
Add the eggs, breadcrumbs, onion powder, garlic powder, salt and grated cheese2.

Mix until you obtain a homogeneous mixture3.
Step 4
Make meatballs and crush them on the pan to form discs (4).
Step 5
Bake at 180°C for 20 minutes5.

Fill the tortillas with the cream cheese and smoked salmon6.
