Soaked peppers are a quick and tasty summer side dish , very simple to make at home. The vegetables, cleaned and cut into strips, are cooked in a pan with a base of extra virgin olive oil and then enriched with crumbled stale breadcrumbs , grated pecorino cheese, capers and dried oregano: for a tasty and appetizing dish, ideal to bring to the table to accompany meat and fish main courses and soft cheeses.
The recipe, typical of the regions of Southern Italy , especially Sicily, Calabria and Puglia, can be prepared with slight variations on the theme based on the area of origin. Some people use breadcrumbs instead of stale breadcrumbs, some add a mixture of olives, pine nuts, raisins and drained anchovy fillets and some replace the pecorino with grated parmesan or provolone. Here we have flavoured the filling with oregano but , if you like, you can opt for your favourite aromatic herbs, such as mint leaves, lemon thyme, basil, chives or parsley.
Excellent enjoyed warm or at room temperature, soaked peppers can also be served as an appetizer or aperitif on fragrant croutons of warm bread, or they can be used in cooking to fill savory pies, sandwiches, focaccias or egg omelettes.
For best results, get some very fresh peppers , firm, fleshy and without bruises: for a pleasant chromatic effect, we used yellow, red and green ones but, of course, you can also choose them in just one colour.

How to prepare soaked peppers
Step 1
Wash the peppers under cold running water1, then drain them and dry them with a clean cotton cloth.
Step 2
Cut the peppers in half and remove the seeds and white filaments inside, then cut them into strips.2.

Collect the stale bread crumbs in a food processor and chop them coarsely.3.
Step 4
In a non-stick pan, heat three tablespoons of extra virgin olive oil, then add the peppers4and cook them over medium heat for about 25 minutes or until they are soft.

At this point, stuff the peppers with the crumbled breadcrumbs5.

Sprinkle them with grated pecorino, add the drained capers and season with dried oregano.6.

Continue cooking for another 15 minutes, turning the vegetables from time to time.7.

If necessary, moisten the peppers with a little hot water.8.

Once finished, remove from the heat and season with salt and pepper.9.
