PEANUT SAUCE.
- RECIPE INGREDIENTS.
- 2 tomatoes.
- 1 piece of onion.
- 2 cloves of garlic.
- 30 grams of peanuts.
- 1 handful of chiles de árbol.
- 3 tablespoons of oil.
- Salt to taste.
- PREPARATION METHOD.
- Initial sauté:
- Heat the oil in a pan over medium heat.
- Add the onion and garlic cloves.
- Fry until the garlic becomes aromatic and the onion looks translucent, approximately 2 – 3 minutes.
- Cooking tomatoes:
- Add the cut tomatoes to the pan and fry them until they are soft and the skin begins to come off, which will make cooking and mixing easier.
- Toast peanuts:
- While the tomatoes are cooking, in another pan toast the peanuts over low heat, stirring constantly to prevent them from burning.
- Fry chiles:
- In the same pan where the tomatoes were cooked, fry the chiles de árbol for a few seconds, being careful not to burn them to avoid a bitter taste.
- Blend:
- Transfer all the fried ingredients, including the peanuts and chiles, to the blender jar.
- Add the coarse salt and the remaining oil, and blend until you obtain a homogeneous and creamy mixture.
- Serve:
- Serve the sauce in a suitable container. You can adjust the salt to taste if necessary.

- Adjust the amount of chiles de árbol according to your tolerance for spiciness.
- Storage:
- This sauce can be refrigerated in an airtight container for up to a week.
