HOMEMADE GREEN SALSA.
- RECIPE INGREDIENTS.
- 500g green tomatillos (small green tomatoes).
- 1 medium onion, cut into quarters.
- 2 garlic cloves.
- 1 green chili (you can adjust the amount according to your taste for spiciness).
- A handful of fresh cilantro.
- Juice of 1 lemon (optional).
- Salt to taste.
- PREPARATION METHOD.
- Tomatillo preparation:
- Remove the husks from the tomatillos and wash them well to remove any sticky residue they have.
- Cooking the ingredients:
- In a large pot, put the tomatillos, onion, garlic cloves and green chili.
- Cover with water and bring to a boil.
- Cook over medium heat for about 10-15 minutes, or until the tomatillos are soft and cooked.
- Blend:
- Once cooked, remove the ingredients from the pot and place them in a blender along with the fresh cilantro and lemon juice (if you decide to use it).
- Add salt to taste.
- Mix:
- Process everything until you obtain a smooth, homogeneous sauce.
- If the sauce is too thick, you can add a little of the water from cooking the tomatillos to adjust the consistency.
