The courgettes are blanched briefly in water, dug out and then stuffed with a filling prepared with their chopped pulp and mixed with tuna, egg, breadcrumbs and anchovies in oil. How to prepare courgettes stuffed with tuna
Boil the courgettes: boil them in water for 5 minutes.
Tear the sandwich bread into pieces and place it in a small bowl. She pours a little water and lets it absorb.
Cut the boiled courgettes in half lengthwise and empty the pulp. Chop the pulp and set it aside.
For the filling: in a bowl mix the tuna in oil, the courgette pulp, the egg, the moist bread, the anchovies in oil, the pepper and the salt.
Arrange the courgette boats in the pan and fill them with the filling. Sprinkle the breadcrumbs and pour in the extra virgin olive oil.
Cook in a static oven at 190°C for 20 minutes.
