Cold pasta with courgettes, olives and cherry tomatoes
Ingredients:
200 g short pasta
2 medium-sized courgettes
100 g ricotta
1 tablespoon parmesan
120 g cherry tomatoes
10 olives
2 basil leaves
salt, oil
Preparation:
- Cook the courgettes in a pan with salt and oil.
- Then blend the courgettes with ricotta, parmesan, pepper and basil.
- Cut the cherry tomatoes and add them to the olives.
- Add the pasta and the courgette cream.
- Stir and serve.
