Pistachio ganache is a simple and delicious cream to prepare as an alternative to the classic chocolate ganache , ready with only 3 ingredients : white chocolate, liquid cream and pistachio paste, ideal for filling cakes and desserts, especially cupcakes or macarons , but you can use it however you like.

To make it, we blended the chopped white chocolate with the pistachio paste , before adding the liquid cream brought to the boil and continuing to emulsify until obtaining a smooth cream. The mixture will then be poured into a container, covered with film and left to rest in the refrigerator for at least 6 hours . Once the necessary time has passed, just blend everything, so as to obtain a soft and frothy pistachio ganache, ready to use to decorate your desserts.

If you are looking for other delicious ganaches, try the strawberry , coconut  or exotic ones . Also try the caramel and coffee ganaches , to satisfy all tastes.

How to make pistachio ganache

Chop the chocolate and place it in a narrow container with high edges.1and add the pistachio cream2. In a small saucepan, heat the cream until it almost boils3.

Pour the hot cream over the chocolate and pistachio mixture4and blend well with an immersion blender5. Continue to emulsify, obtaining a smooth cream without lumps6.

Transfer to a large container to cool quickly and cover with cling film.7. Let it rest in the fridge for 6 hours or overnight. Whip the ganache obtained with an electric whisk8or in a planetary mixer, be careful not to whip it too much. Transfer it into a piping bag and have fun decorating your sweets or filling cakes9.

You can store the pistachio ganache in the refrigerator for 2-3 days , covered with cling film or in an airtight container.
