Spinach and Ricotta Cannelloni
I always thought that making spinach and ricotta cannelloni was a slightly complicated menu to make, but with the recipe that we are going to give you today, you will no longer have excuses.
Making the pancake dough is very simple, so much so that we are going to prepare it in the blender. It is a dough that will be used to make cannelloni, as well as to make pancakes with dulce de leche.
We can prepare cannelloni with beef, chicken, stuffed with ham and cheese or, as on this occasion, with vegetables. Nothing tastier than some good homemade cannelloni, made with our own hands.

Ingredients
Pancake Batter
For approximately 15 units
-500 cc of Milk
-3 eggs
-3 tbsp. Sunflower Oil
-250 g of flour
Stuffed with spinach and ricotta cannelloni
-Boiled spinach approximately 3 bundles.
-1 large onion
-1/2 Red bell pepper
-500 gr fresh ricotta
-150 gr grated cheese
-200 gr Cream Cheese
-Salt, pepper and nutmeg
-Bolognese Sauce or White Sauce
How to make spinach and ricotta cannelloni
For the pancakes
- On this occasion, we are going to use the blender but if you don’t have one, you can do it the same with a wire whisk or fork.
- We put the milk, eggs, oil and flour in the blender glass. That’s it, it’s that simple.
- We activate the blender and let it work for no more than a minute.
- Then we remove the mixture from the blender and put it in a container.
- We prepare a frying pan with a few drops of oil and with the help of a napkin, we spread it well over the entire surface.
- We put it over medium heat and let it heat up. The pan must be very hot before adding the mixture, otherwise the pancakes will stick.
- Once the pan is hot, with the help of a ladle, we are going to pour a little of the mixture into the center. We move the pan in circular movements so that the mixture spreads evenly.
- We let it cook for a few seconds and with the help of a toothpick, we loosen the edges. Then we turn it over and let it cook for a few more seconds.
- We remove from the pan and put on a plate.
- We repeat the operation to do the rest.

For the filling
- First of all, we must drain the spinach well.
- Sauté the onion and bell pepper cut into small squares in a frying pan with a splash of oil.
- We put the fried food in a container with the spinach, ricotta and grated cheese. Season with salt and pepper and mix until all the ingredients are incorporated.
- We take a pancake and spread a little filling in the center but along the length.
- We put a sheet of cream cheese on top, cover with a little filling again and roll up.
- As we make them, we arrange them in a dish, preferably glass.
- Finally, we bathe them with the sauce that you like the most, it can be a Bolognese, Filet or White Sauce.
- On top we sprinkle grated cheese or if we want it to really be a culinary bomb, we can put a few more slices of creamy cheese on top.
- We put it in a strong oven for about 15 to 20 minutes.
- Then we remove and let it cool before serving.
