Cold Lemon Pie Recipe!

Ingredients:

 base:

  • 500 g shortbread cookies
  • 150 g of butter
  • 6 cl of milk
  • Lemon peel

For the stuffing:

  • 600 g of high-quality lemon yogurt made from whole milk and cream
  • 50 cl unsweetened liquid cream
  • 250 g of powdered sugar
  • Lemon peel
  • yellow food coloring

For decoration:

  • Lemon peel

preparation:

Prepare the base:

  1. Cover a cake tin with a diameter of 26 to 28 cm with cling film.
  2. Blend the shortbread in a blender, then place in a bowl.
  3. Melt the butter with the milk in a water bath or in the microwave.
  4. Pour the mixture over the shortbread, add the grated lemon zest and mix well.
  5. Cover the entire bottom and sides of the mold with the resulting mixture
    and press down well with a spoon as if you were doing it for a cake.
  6. Place in the freezer for at least 15 minutes.

Prepare the filling:

  1. We beat the liquid cream very stiff with the sugar.
  2. Combine the yogurt and lemon zest and stir until well combined.
  3. Divide the mixture into two parts and add yellow food coloring to one of them.
  4. Spread the yellow mixture on the biscuit base in an even layer.
  5. Fill the bag with the white part and make a ball covering the entire yellow layer.
  6. Refrigerate for at least 3 hours before serving (you can leave the cake overnight).
  7. After three hours, carefully remove from the pan, remove the foil and place the cake on a tray.
  8. Let stand at room temperature for 5 minutes before serving and sprinkle with grated lemon zest.
  9. The cold lemon cake is now ready to be enjoyed. Enjoy your meal !
