By Lesia

Homemade Rosemary Jelly Recipe with Garden Herbs , If your rosemary has thrived this summer, it may be in the way now. But rather than throwing it away, why not make a delicious homemade jelly? Here’s my easy recipe that only takes 5 minutes. This is a tip that my grandmother passed on to me, in addition to being tasty, this jelly has medicinal properties .

Ingredients :

  • 5 sprigs of rosemary (about 30g)
  • a colander
  • 150 g sugar
  • 1 tablespoon of honey
  • 500 ml of water
  • 3 g of agar-agar
  • a saucepan with a lid
  • a salad bowl
  • glass jars

Homemade Rosemary Jelly Instructions:

Rinse the rosemary sprigs.

In a saucepan, immerse the rosemary sprigs in the water and bring to the boil.

As soon as the water boils, remove the pan from the heat and cover it. Let it steep for 15 minutes.

Strain the infusion into a salad bowl and let it cool.

Once the infusion has cooled, add the agar-agar and mix well.

Add the sugar and honey, then mix again.

Return the pan to low heat and heat gently, without boiling, until the sugar has completely dissolved.

Pour the jelly into glass jars, let cool to room temperature, then refrigerate.

This jelly is ideal to accompany your savory or sweet dishes, or to offer as a gift to your friends and family. Enjoy your rosemary to the fullest!

So !!

Rosemary jelly is ready! It is an easy, quick and delicious recipe that can be enjoyed all year round thanks to its good conservation. You can keep your jars in the fridge for as long as you want, because the sugar serves as a preservative, as with jams. If you want to reduce the amount of sugar slightly, it is quite possible.

How to enjoy rosemary jelly?

Rosemary jelly has a refined taste that recalls the flavors of the Mediterranean. You can enjoy it on toast or use it to accompany a yogurt cake. It also goes very well with sheep or goat cheese, smoked ham or even as a dessert with tea, biscuits or ice cream.

What are the benefits of rosemary jelly?

And that’s not all, rosemary jelly also has medicinal properties. Rosemary is known for its anti-inflammatory, antiseptic and expectorant properties. Therefore, in case of cold or bronchitis, it is recommended to take a tablespoon of jelly. You can also dilute the jelly in hot water to make a beneficial herbal tea.

Here are some tried and tested examples:

  • add thyme,
  • add some lavender flowers,
  • put some lemon peels,
  • add juice of figs, apples, quinces, peaches, cherries or oranges
  • or choose a strong tasting honey.
