How to prepare Bizcochuelo like grandma did

To prepare this delicious cake, you will need:

Ingredients:

  • 200 g sugar (1 cup)
  • 115 g melted butter (1/2 cup)
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 250 g of 0000 flour (2 cups)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 pinch of salt
  • 240 ml milk (about 1 cup)

Preparation:

  1. Start by preheating your oven to 180°C (350°F). While the oven is heating, prepare a cake pan. You can use a mold about 20-23 cm in diameter, and sprinkle a little flour on the bottom and sides, or place parchment paper to prevent the cake from sticking.
  2. In a bowl, sift the flour, baking powder, baking soda and pinch of salt. Mix these dry ingredients well and set them aside.
  3. In another large bowl, beat the sugar and melted butter until smooth and creamy. This can be done with an electric mixer or by hand with a wire whisk.
  4. Add the eggs one at a time, beating well after each addition. Then, add the vanilla essence and mix until well combined.
  5. Begin gradually adding the sifted dry ingredients to the wet mixture. Alternate with the milk, beginning and ending with the dry ingredients. Mix on low speed to prevent flour from spilling. Continue mixing until the dough is smooth and lump-free.
  6. Pour the batter into the prepared pan and spread evenly. Place in the preheated oven and bake for approximately 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Once ready, remove the cake from the oven and let it cool in the pan for a few minutes before turning it out onto a rack to cool completely.
