I have never eaten such delicious eggplant! Italian recipe for garlic eggplants
Ingredients
- 1 large eggplant
- 3 cloves of garlic
- Chopped fresh parsley
- 1 teaspoon hot chilli
- 40 ml of Olive Oil
- Salt and pepper to taste.
Preparation steps
- Preparation of the eggplants: We start by washing the eggplant and cutting it into slices approximately 1 cm thick. Salt them lightly and let them rest for a few minutes to release the vegetation water.
- Preparation of the dressing: While the eggplants are losing water, we peel the garlic cloves and chop them very finely along with the parsley and chilli.
- Cook the eggplant: Heat the olive oil in a large skillet over medium-high heat. Pat the eggplant slices dry with kitchen paper and fry until golden and crispy on both sides.
- Finish: Once the eggplants are cooked, sprinkle the garlic, parsley and chilli mixture on top. Add salt and pepper to taste.
- Serving: Serve the eggplants hot as an appetizer or side dish, garnishing with additional chopped fresh parsley if desired.
This dish is an excellent solution for an appetizing appetizer or tasty side dish, completely vegan and simple to prepare, but rich in flavor.
