Ingredients

For the dough:

  • 3 Eggs
  • 130 gr of Sugar
  • 125 gr of natural yogurt
  • 100 ml of seed oil
  • 1 sachet of baking powder
  • Juice and zest of one lemon
  • 250 gr of flour

For the syrup:

  • 50 ml of water
  • 30 g of sugar
  • Juice of 1/2 lemon and zest

For the glaze:

  • 100 g of powdered sugar
  • 2 tbsp lemon juice
  • 1 tbsp of milk

Preparation

  1. Prepare the dough :
    • In a large bowl, beat the eggs with the sugar until you get a foamy, light-colored mixture.
    • Add the lemon juice and zest, mixing well.
    • Add the oil and natural yogurt to the egg and sugar mixture.
    • Sift the flour together with the baking powder and gradually add it to the mixture, beating gently until you obtain a homogeneous dough.
  2. Bake :
    • Pour the dough into a mold previously greased with butter and floured.
    • Bake at 170° C for approximately 35 minutes, or until a toothpick inserted in the center comes out clean.
  3. Prepare the syrup :
    • While the pudding is baking, combine the water, sugar and lemon juice with the zest in a saucepan.
    • Heat over medium heat until the sugar has completely dissolved.
  4. Moisten the pudding :
    • Once the pudding is ready, remove it from the oven and let it cool slightly.
    • Using a toothpick, make small holes in the surface of the pudding and pour the syrup evenly so it is absorbed.
  5. Prepare the glaze :
    • In a bowl, mix the lemon juice, milk and powdered sugar until you obtain a smooth and slightly thick consistency.
    • Pour the glaze over the cooled pudding and let it harden slightly.
  6. Decorate :
    • For a decorative touch, place thin lemon slices on top of the frosting.
