- 1 kg of Potatoes
- 300 gr of Flour 00
- 1 Egg

Preparation, step by step

- First of all, you have to wash the potatoes well and place them in a pot with water and let them cook.
Step 2:
- After draining the potatoes and cutting them in half to release all the steam and moisture.

- Once they are no longer steaming but are still warm, remove the skin.
Step 4:
- Next, pass the potatoes through a potato masher or sieve. It’s crucial that the potatoes are hot to make the process easier, as working with cold potatoes can be tricky.
Step 5:
- Add the flour, egg and salt to the bowl with the mashed potatoes.
Step 6:
- Begin kneading, first using a fork or wooden spoon, and then on a floured surface with your hands, until you have a smooth, uniform dough.
- Make sure you use just the right amount of flour, as adding too much will make the gnocchi tough.
Step 7:
- Divide the dough into small portions and form them into sausages.
Step 8:
- Using a knife or whatever you prefer, cut the gnocchi into pieces approximately 2 cm long.

- Shape each piece of dough into a slightly rounded shape with your hands.

- Then, pass each piece of dough between the tines of a fork, pressing lightly with your fingers to create the classic striped texture that absorbs the sauce well. Alternatively, you can use a gnocchi grater if you have one.
