Tricks to make thin and crispy fried cakes

Without a doubt, fried cakes are a classic for Argentinians and are a faithful companion to traditional mates. Especially everything is combined with the rainy and cold days of winter, one of the true pleasures of life.

It is also an easy and simple recipe to prepare, it has the basic ingredients and a good preparation hand within everyone’s reach. But it is also true that everyone has their own tastes, there are those who prefer them plump and spongy and there are also those who choose them rather thin and crispy.

The truth is that all the ways in which they are prepared are delicious and irresistible. Below we are going to see a practical recipe on how to make them at home plus  some tricks and tips to prepare them thin and crispy:

  • To keep in mind, they can be made with or without fat. This depends on personal tastes and also the need to eat a little healthier. In any case, fried cakes made without fat are lighter but just as tasty.

Ingredients

  • 1 cup self-rising flour
  • 500 gr. of common flour
  • 1/4 cup of Oil
  • c/n warm water
  • 1 tsp. salt
  • 1 tbsp. of sugar
  • w/oil

Preparation:

  • We begin by placing the cup of self-rising flour, the common flour, salt, sugar in a large bowl, adding the 1/4 cup of oil and the warm water little by little while we help with our hands to form the bun or dough.
  • Then we begin to knead vigorously until the dough is ready, this will be indicated when a kind of blisters form on the surface.
  • Next step, we cover the bowl with the dough with a cloth so that it rests and doubles its volume. We let it rest for approximately 30 minutes.
  • Once this time has elapsed, we take the dough and stretch it to cut the dough and form buns.
  • When we have all the buns made, we begin to stretch them with our hands and with the help of a rolling pin. The idea is to shape the fried cakes into a circular shape, rather thin so that they come out crispy.
  • Also with the help of a fork we prick them or make a cut in the center to facilitate cooking.
  • Meanwhile, heat plenty of oil or fat or both in a frying pan. When the ideal temperature is ready, we begin to fry the fried cakes.
  • As they brown to taste, remove them and place them in a container with absorbent paper to release excess oil and fat.
  • Finally, we sprinkle sugar to taste and ready to enjoy them with some delicious mate or coffee with milk.

Recommendations:

  • For kneading, the key is in kneading so that they come out crispy on the outside but tender on the inside.
  • If we are going to fry with fat we know that it will give off a lot of smell, so a tip is to add some lemon peels to the fat.
  • Regarding the temperature of the oil, we must make sure that it is very hot otherwise the dough will absorb a lot of it. Furthermore, the amount of oil in the pan has to be abundant, so that when we fry them they are covered and cook evenly.
