Snowballs in vanilla sauce

Ingredients

  • 1 pinch of salt
  • 2 vanilla beans
  • 550 ml milk
  • 60 grams of granulated sugar
  • 1 teaspoon lemon juice
  • 100 g powdered sugar
  • 2 packets of vanilla sugar
  • 4 eggs
  • 2 tablespoons chocolate chips

Instructions

1. At first, cover the large flat plate with plastic wrap so that the meatballs do not stick to the plate later.
Then separate the eggs and reserve the yolks for the sauce. Split the vanilla beans lengthwise.

2. Now boil the milk with the vanilla beans, 30g of granulated sugar and salt and immediately remove from the heat. Now beat the egg whites with the icing sugar and vanilla until creamy, stirring in the lemon juice.

3. Next, use the large spoon to cut six balls of dough of the same size from the snow and place them in the hot milk and let them sit for about 2 minutes, turn over and let them sit for another two or three minutes.

4. Next, remove the meatballs from the milk, drain them well and place them on the plate lined with plastic wrap.

5. Then remove the vanilla pods from the milk and mix the egg yolks with the remaining granulated sugar (30 grams). Boil the milk and pour in this egg yolk mixture while stirring. Then continue stirring the egg milk over low heat until you have a creamy batter.

6. Finally, spread the vanilla sauce on the plates, add the meatballs, decorate with chocolate shavings and serve.
