  • 400 grams of grated coconut
  • 50 grams of unleavened flour

Preparation

  1. In a large bowl, mix the grated coconut, flour and sugar. Make sure all the ingredients are well integrated.
  2. In a separate bowl, beat the eggs until well beaten and foamy.
  3. Pour the beaten eggs over the coconut, flour and sugar mixture. Mix everything gently until you obtain a homogeneous mass.
  4. Add the lemon juice to the dough and mix again.
  5. Preheat the oven to 180 degrees Celsius.
  6. Prepare the muffin cups by placing the paper cases in a muffin pan.
  7. Fill each capsule with the coconut dough, filling it about 3/4 full.
  8. Place the pan in the preheated oven and bake for about 10 minutes, or until the muffins are golden brown on top.
  9. Once the muffins are ready, remove them from the oven and let them cool in the pan for a few minutes.
  10. After cooling slightly, transfer the muffins to a cooling rack to cool completely.
  11. Once the coconut muffins are completely cool, they are ready to be enjoyed. You can serve them as is or sprinkle a little grated coconut on top to decorate.
