Pasta with eggplant and tomato sauce! Incredibly good and flavorful!

A delicious and filling dish, suitable for lunch or dinner! It is prepared easily and quite quickly, from a few ingredients. Each of you can handle this simple recipe, even if you have no cooking experience!

INGREDIENTS:

-300 g of pasta (we used tagliatelle);

-2 eggplants;

– a small onion;

-2 cloves of garlic;

-6 cherry tomatoes;

-300 mg of tomato broth;

– salt, ground black pepper — to taste;

-olive oil — to taste;

-2 tablespoons of fermented cream;

-20 g of parmesan;

-parsley — to taste.

METHOD OF PREPARATION:

1. Chop the onion and garlic. Fry them in the right amount of olive oil until they soften.

2.Cut the eggplant into cubes.

3. Add them to the pan. Sprinkle them with a little salt and fry them for 2-3 minutes. Then add a little water and simmer them for 5 minutes on moderate heat under the lid.

4. Add the tomato broth, salt and ground black pepper to taste. Stir. Cook the eggplant in the sauce for 15 minutes, covered.

5. Add the sour cream. Stir.

6. Add the quartered cherry tomatoes. Stir.

7.Cook the vegetables in the sauce for another 5 minutes, covered.

8. While the sauce is being prepared, boil the pasta in slightly salted water, following the instructions on their package.

9. When the sauce is ready, add 2 tablespoons of the water in which the pasta was cooked and the pasta cooked in the pan. Stir.

10. Add the Parmesan grated through the small grater. Stir.

11. Add the chopped parsley and a little olive oil. Stir.

12. Serve the pasta with eggplant and tomato sauce! Enjoy their wonderful taste!
