Grandma’s plum jam, the best I’ve ever made!

Ingredients

2.5 kg plums or damsons, very ripe
220 g sugar
220 g sugar, brown
1 tsp cinnamon
5 cloves, crushed

preparation

1.First, clean the plums, halve them and remove the stones. Mix with the sugar and spices, put in a roasting pan or other oven-safe dish and leave to draw juice for 2 hours.
(Alternatively, you can briefly boil the mixture in a pot to save time).

2. Then cook in the oven at 170 degrees for about 2 hours until it thickens. During the first half to three quarters of an hour, wedge a wooden spoon into the oven door so that the moisture can escape.

3. Finally, if desired, purée briefly with a hand blender and fill into hot, rinsed twist-off jars and seal. Turn upside down and allow to cool.

The recipe comes from my grandmother, but she cooked it entirely with white sugar. The brown sugar makes the puree even more aromatic.
