Gravel pit cake with mandarins, something different but soooo tasty
5 eggs
200 g sugar
200 g ground almonds
30 g flour
1 tsp baking powder
300 g dark chocolate
250 ml cream
20 g cream stabilizer
2 cans of mandarins (drained weight 175 g each)
Preparation
1 Beat eggs with sugar until frothy. Fold in ground almonds, flour and baking powder. Chop the chocolate, stir in 100 g of it, put the rest to one side. Put the dough in a greased springform pan (Ø 26 cm) lined with baking paper and bake in a preheated oven (electric oven: 180 °C/fan oven: 160 °C) for approx. 45 minutes.
2 Cut a circle into the cake base and hollow out the top part with a spoon without damaging the bottom part of the base (see video). Crumble the hollowed-out cake pieces.
3 Whip the cream with the cream stabilizer. Fold in the crushed cake crumbs and drained canned mandarins. Pour the cream mixture onto the cake base and spread it out to form a dome. Chill for 30 minutes.
Melt the rest of the chopped chocolate over a hot water bath and allow to cool slightly. Cover the gravel pit cake with the chocolate and chill for a few hours.
