Vegetable croquettes: quick and easy to make!

INGREDIENTS

  • 1 kg of potatoes
  • 200 g carrots
  • 200 g peas (can be frozen)
  • 200 g green beans (can be frozen)
  • 1/4 cup of chopped parsley
  • salt
  • pepper
  • 2 eggs
  • 100 g parmesan cheese
  • 3-4 eggs, beaten
  • 2 cups of breadcrumbs

METHOD
Boil and peel potatoes and carrots.
Cut up carrots, green beans.
Mash potatoes, add 2 eggs, salt, pepper, parmesan
Add carrots, peas, asparagus, parsley.
Form balls and press with a flat bottom of a cup
Dip in egg, then in breadcrumbs and fry until golden brown
