This is how I manage to preserve parsley without freezing it, always as fresh as when I bought it

If you have a lot of parsley and you want to preserve it without resorting to the freezer, I will explain a foolproof method that I use myself. Here is what to do to always have fresh parsley as if you had just bought it.

Parsley is one of the most used aromatic plants in the world and in Italy its use is really enormous. This plant has a thin stem and green leaves with irregular edges and is available in several varieties. What is found in every Italian home and supermarket is the so-called “common parsley”, but there is also curly parsley with serrated leaves and a less spicy taste (this type of parsley is mainly used for decorations).


Not only is parsley very good and tasty, but it is also an excellent antioxidant and has digestive antiseptic properties . Finally, it is also easy to grow because it is a slow-germinating plant, perfect to keep in a pot that adapts to all soils. In short, the arguments in favor of parsley seem endless, but this plant faces a major difficulty: its conservation .

In fact, parsley spoils quickly if not stored properly , because it is a very delicate food. It is convenient to always have a bunch of it available in the kitchen , but to do this you need to know how to best preserve it and the best solution is not the freezer.

Fresh Parsley
If you freeze parsley, you have to wait for it to defrost before you can use it, and you don’t always have time. So I experimented with two preservation methods that don’t require freezing. In the first case, I use the refrigerator: I wrap the parsley stems in damp paper towels and put them in a container with a tight-fitting lid, which I then put in the refrigerator . Remember that the paper towels need to be changed from time to time . The second method doesn’t require a refrigerator and allows you to keep parsley fresh for more than a week.

In practice, I put the bunch of parsley that I bought at the supermarket in a jar and soak the stems in water as if they were a bouquet of flowers . This method allows you to preserve parsley without using the freezer or refrigerator , and the parsley will stay fresh for up to a week after purchase. However, if I plan to use the parsley long after the purchase date or if I bought it in bulk, the freezer is the only option!
