Verrines with apples, salted butter caramel and cookies

Ingredients
2 Reines des Reinettes apples, peeled and cut into pieces
50 g semi-salted butter
1 tablespoon cane sugar
250 g of mascarpone
20 cl full cream
50 g sugar
1 to 2 tablespoons of salted butter caramel
100 g of Traou Mad apple galettes
Steps
Heat the butter in a pan until it crackles.
Add the diced apples and the spoonful of cane sugar.
Fry the apples for 5/6 minutes over medium heat, until they have a nice golden color.
Leave to cool off the heat.
Whip the liquid cream with the sugar in a bowl until stiff.
In another bowl, whisk the mascarpone and add the salted butter caramel.
Gently fold the whipped cream into the mascarpone.
Crumble the Traou Mad Apple Galettes into coarse crumbs.
Place a few crumbs of Traou Mad Apple Galettes in the verrines.
Add a spoonful of apples then a little caramelized mascarpone cream.
Repeat the operation and finish by decorating with a few remaining cookie crumbs. Keep chilled until ready to serve.
