No-bake coffee pie – 5 minutes
Fresh and creamy no-bake coffee pie recipe. This easy dessert is made with a biscuit base and a filling of liquid crème fraîche and coffee.
This no-bake coffee pie is both light and creamy, perfect for those hot summer days.
How to make coffee pie without baking!
Ingredients :
- 300g flour biscuits
- 100g melted butter
- 20g cane sugar
For garnish :
- 250 g of mascarpone
- 60ml cold coffee
- 250 ml liquid fresh cream
- Cocoa Powder
- 60g icing sugar
Preparation :
- Start by lining a springform pan 22-24 cm in diameter with parchment paper.
- Reduce the biscuits to a powder with the cane sugar.
- Transfer them to a bowl and add the melted butter.
- Mix well, then pour the mixture into the mold and flatten it well on the bottom and sides of the mold.
- Place the mold in the refrigerator for 30 minutes.
- Meanwhile, mix the mascarpone with the coffee and the icing sugar until you obtain a homogeneous cream.
- Add the liquid fresh cream and whisk well until you obtain a foamy and homogeneous cream.
- Pour the cream over the biscuit base and sprinkle with cocoa powder.
- Let the pie rest in the refrigerator for 2 hours.
- Fresh and creamy no-bake coffee pie is ready.
